This easy spicy Blackstone Mexican chicken recipe is another versatile protein that is delicious in tacos, quesadillas, salads, wraps, etc.! One of my favorite ways to eat this is with roasted sweet potatoes, plain nonfat Greek yogurt (basically sour cream), and fresh, chopped spinach. Ingredients
  

  • 2 lbs Chicken thighs, boneless, skinless
  • 1 packet Trader Joe's taco seasoning, or other spicy taco seasoning
  • Avocado oil, for coating Blackstone

  • Heat Blackstone to medium-high heat. Evenly coat with a thin layer of avocado oil.
  • Rub taco seasoning on each side of all chicken thighs, then put on Blackstone.
  • Cook for 5 minutes each side, or until internal temperature reaches at least 165 degrees Fahrenheit.
